Master cavatelli, lasagne, gnochetti sardi, pici, lasagne, tagliatelle and maltagliati. 
Chef Calenzo will cover basic sauces as well, including Bolognese ragù, 
bechamel, and traditional tomato sauce. 
This class is not for beginners and a working knowledge of fresh pasta making is recommended.

Chef Marco Calenzo, originally from Florence, has established himself as a prominent figure in Miami's culinary scene. Raised by a mother who was the daughter of farmers and a father who was a former sailor, Calenzo developed a deep respect for ingredients from an early age, nurturing an innate connection to both land and sea.

His passion for cooking led him to train under Michelin-starred chefs in Italy, London, and Japan, refining a sophisticated and innovative style.

Today, as the head of the Four Seasons Hotel at The Surf Club—home to the Lido Restaurant and the Champagne Bar—Chef Marco blends Mediterranean flavors with modern techniques, creating dishes that honor tradition while embracing creativity.

His culinary vision earned Lido the prestigious Tre Forchette (Three Forks) award for both 2024 and 2025, as well as the title of Chef of the Year awarded by Gambero Rosso in 2024.
